The Greenbrier’s Famous Chicken Salad. I had never had chicken salad with sour cream and it was delicious! This is so easy to put together, I make chicken salad for the kids several times a week in the summer. 2.5 lbs boiled chicken, diced 1 cup diced celery (3 medium ribs celery) 2/3 cup sour cream 1 1/3 cups mayonnaise 2 tablespoons white wine vinegar Salt and freshly ground black pepper, to taste -Put the chicken in a pot with lightly salted cold water to cover. Bring to a boil, reduce the heat, and skim off any foam on the top, until the meat is tender when pierced with a knife, 30-45 minutes. Let the chickens cool in the pot then cut the meat into ¼-inch dice. - Chop the celery then add all ingredients together and mix well.
