My boys peanut butter chocolate energy bites. Whenever we have a hard time getting off a sugar or carb craving, I make these no bake, low sugar energy balls to change our taste buds. (I doubled this recipe) 2 cups oats 1 cup + 2 tbs peanut butter 1/3 cup honey 1/3 cups shredded unsweetened coconut 1/2 cup unsweetened cocoa powder Additional add ins: 1 Tbs chia seeds, 3 tbs flax seed - For the oats, either blend them for 10 seconds in a food processor to break down the oat or use quick oats. - Combine all ingredients and make into balls. Place in the refrigerator for 2 hrs before storing. Keeps for up to 5 days (but they never do). Substitute: you can reduce the fat content significantly if you use PB2 powder.
