SAVE this dip for Super Bowl weekend or your next get together! 


Sausage and Cream cheese Dip
*1lb ground breakfast sausage (I use mild)
*2 (8oz) packs of cream cheese
*1 (10oz) can of rotel (undrained)

1. Brown and drain the sausage
2. While the sausage browns, cut cream cheese into 1in chunks
3. Put sausage in crockpot and top with cream cheese and Rotel. Stir to combine.
4. Cook on high for about an hour, stirring frequently. 
Once heated through well, turn crockpot on low or keep warm, depending on your crockpot! 

Serve with tortilla chips!  

Super Bowl hosting.

This heart pasta with blush sauce is not only cute but delicious! My whole family loved it. Perfect for Valentine’s Day!💕. Recipe Below👇🏻

Heart Pasta with Blush Sauce

Ingredients
2 Tbsp butter
1 shallot, diced (or 1/2 yellow onion)
3 garlic cloves, minced
28oz can of tomato sauce
1 Tbsp tomato paste
1 tsp salt
1/4 tsp pepper
1 1/2 tsp oregano
Sprinkle of sugar
1/3 cup white wine
3/4 cup heavy whipping cream
Heart shaped pasta (or any pasta of your choice)
3/4 cup freshly grated Parmesan + more for serving (shredded Parmesan works well too)
Mozzarella pearls
Fresh basil 

Directions
1.Melt butter in sauté pan or large skillet on medium heat
2.When the butter is melted, add shallot and garlic. Let cook 1-2 min. then pour in tomato sauce and white wine. Cook uncovered about 7 minutes, stirring occasionally 
3.Add in tomato paste and spices. Stir to mix well. Place lid on pan, leaving a little space open. Turn to low and cook about 20 min.
4.While sauce cooks, cook pasta to package instructions.
5.remove lid and stir in heavy cream and Parmesan cheese. Stir to combine. Taste and add salt and pepper if you wish.
6.Plate pasta and top with mozzarella pearls, freshly grated Parmesan cheese, and fresh basil.

Serve.

Stuffed Jalapeños

Ingredients:
1lb breakfast sausage
1lb fresh jalapeños
1 pack cream cheese
1 cup of shredded Parmesan cheese

1. Preheat oven to 475
2. Brown your sausage and drain fat
3. Wash and slice jalapeños lengthwise. Use a spoon to scoop out the seeds and rib (don’t touch your face or eyes after without washing your hands well!🔥)
4. Mix browned sausage, cream cheese, and Parmesan cheese together well in a bowl
5. Stuff jalapeños with sausage and cheese mixture. Bake for 20-25 min.

**I’d say these are mild in heat. They truly aren’t spicy if you get the seeds and rib out. I am a wimp when it comes to spice and I eat these so much!

This sheet meal is delicious and so easy to make. Add a side salad and some baguette! I like a green salad with a simple vinaigrette- Ina Garten has a great vinaigrette recipe!

🍯 Honey Dijon Sheet-Pan Chicken

Ingredients (serves 4)
Chicken:
1½–2 lb chicken thighs (bone-in, skin-on for best flavor)
Salt + black pepper, to taste
Optional: trim excess fat to your liking (I left it on for moisture)

Vegetables:
1 lb baby potatoes, halved
2 cups carrots, sliced on the bias, ½–¾ inch thick
1 red onion, cut into thick wedges
Optional: green beans or broccoli (added later)

Honey Dijon Glaze
⅓ cup Dijon mustard
¼ cup honey
3 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh thyme, finely chopped OR 1 tsp dried
1 tsp paprika
Salt + black pepper, to taste

Instructions
1. Make the glaze:
In a bowl, whisk together Dijon mustard, honey, olive oil, garlic, herbs, paprika, salt, and pepper.
2. Marinate the chicken (recommended):
Season chicken lightly with salt and pepper. Add to a bowl or zip-top bag and coat well with the glaze.
Marinate at least 30 minutes (or up to 8 hours in the fridge for more flavor).
3. If leaving the skin/fat on, gently pull it back and get some glaze between the meat and the skin, then lay it back down.
4. Prep the oven: Preheat oven to 425°F.
5. Prepare vegetables: Toss potatoes, carrots, and red onion with a drizzle of olive oil, salt, and pepper. Spread evenly on the sheet pan.
5. Add chicken: Place the marinated chicken thighs among the vegetables. Spoon any extra glaze over the chicken (and lightly over the veggies).
6. Cook uncovered for 30–35 minutes, until chicken is cooked through and vegetables are tender.
7. Optional veggie add-in: If using green beans or broccoli, toss them onto the pan during the last 12–15 minutes of cooking.

Mississippi Pot Roast and Baked Cheese Grits is a meal you will want again and again! My friend Sarah made this for me over 10 years ago and thankfully shared the recipe with. I’ve been making it ever since!
I got my chuck roast from Publix and I used McEwen and Sons grits. I can’t link either here. Delicious crockpot recipe 

ROAST
1 (2-3lb roast)
1 cup water
1/3 cup white vinegar
1 pack au jus gravy mix
1 pack of Italian dressing mix
1/2 jar of pepperoncini peppers + a little juice
1 stick of butter
Carrots, potatoes, and celery- optional but I say don’t skip it!

1. Place meat in crockpot and punch holes with fork 
2. Add chopped vegetables here if you’re using them
3. Mix vinegar with water, gravy mix and Italian dressing mix
4. Pour over roast (and vegetables)
5. Place peppers on top with a little of their juice. 
6. Add stick of butter on top of roast.
7. Cover and cook on low for 8 hrs.
**if liquid cooks down too much add a little water
8. Pull meat apart and serve.

Baked Cheese Grits
4 1/2 cups of water, divided
1 tsp salt
1 cup quick cooking grits
1/2 cup butter 
1 block pepper jack cheese, shredded
2 eggs, beaten 

Preheat oven to 350
1. Bring 4 cups of water to a boil in a medium pot. 
2. While you wait for water to boil:
-shred your cheese
-cut butter into 1 inch pieces so it melts easily
-beat two eggs and add remaining 1/4 cup water to them
3. Once water is boiling, stir in salt and grits. Reduce heat to low and let grits cook for about 2 minutes, stirring often.
4. Add butter and cheese to grits, stirring to combine and melt.
5. Remove pot from heat.
6. Dip out 2-3 large spoonfuls of grits and add to egg until mixed. This warms the egg and keeps it from scrambling when added to large pot of hot grits.
7. Now pour eggs into pot of grits.
8. Pour all into a 9x13 baking dish. Cook uncovered on 350 for 1 hr.

Serve with roast.
