Easy & healthy weeknight dinner idea - Little Gem Steak Salad with Halloumi Crumbles 🥬 extra virgin olive oil 8 oz halloumi 1/4 cup walnuts (extra healthy fats!!) S&P little gem lettuce or romaine hearts (radicchio mixed in would be yummy too) 1 shallot thinly sliced 1 lemon Grate the halloumi using a course cheese grater Heat 2.5 tbs evoo in a skillet over medium and add the halloumi and walnuts, cook until golden brown, cool and season with pepper Zest and juice the lemon and add it to a bowl with the lettuce and shallot. add 1 tbsp evoo, salt and pepper, and toss. Add the halloumi crumbs and walnuts on top While you’re doing that have your fiancé grill you a yummy steak :) he’s the master so maybe I’ll share his recipe and tips one day Plate the salad making sure the crumbles are nice and stuck in the lettuce cups, add the steak and enjoy!!
