Easy Cheesy Brussel Sprouts Salad Ingredients 1½ lbs Brussels sprouts 4 tbsp olive oil (divided) 1 tsp salt ½ cup sliced olives ½ cup chopped artichoke hearts ½ cup chopped roasted red peppers 1 cup finely grated Parmesan or any hard, salty cheese 1 tbsp red wine vinegar 2 tbsp lemon juice ½ cup toasted breadcrumbs Instructions Thinly slice the Brussels sprouts (they don’t have to be perfect!). Set aside about 1 cup raw for later. Heat 1 tbsp olive oil in a large pan. Add the rest of the Brussels sprouts with salt and cook for about 2 minutes, just until slightly softened and bright green. Transfer to a big bowl and toss with olives, artichokes, red peppers, and cheese (it’ll get a little melty—so good).
