Salads for days! And these are some must haves to make it work! I’m including this first episode recipe here! Spring Floral Salad Ingredients: • 12 oz spring mix or baby spinach • 1 cucumber, peeled in stripes and sliced thin • 1/2 cantaloupe, sliced and cut into flowers • 6 oz fresh mozzarella pearls • 1/2 pint cherry or grape tomatoes • 8 oz thin prosciutto, rolled into roses • Olive oil, balsamic glaze, salt & pepper Honey Dressing (optional): • 2 tbsp honey • 1 tsp Dijon mustard • 2 oz red vinegar • 4 oz extra virgin olive oil • 1 tsp salt • 1/2 tsp pepper Add to a mason jar and shake well. Directions: Spread greens on a platter. Arrange cucumber flowers, cantaloupe flowers, tomatoes, mozzarella and prosciutto roses over the top. Season with salt and pepper.
