Sourdough Starter

Equal parts of water and bread flour measured in grams

Day 1: 50/50
Day 2: 30/30
Day 3: 30/30
Day 4: discard half, feed 30/30
Day 5: 30/30
Day 6: discard half, feed 30/30
Day 7: 30/30

Continue process of feeding 30/30 and every other day discarding half until the starter grows 60-70%. Once it grows 60-70% place starter in fridge until you’re ready to make bread.

Example:
Day 8: discard half, feed 30/30
Day 9: 30/30
Day 10: discard half, feed 30/30

NOTE: Starter consistency should be similar to a thick pancake batter. If it’s too thin, add 30 g of flour and slightly less water to thicken it.

If your starter rises and then starts to fall, it has passed its peak. Place it in the fridge to slow fermentation and take it out when you’re ready to feed again.
