CHRISTMAS MORNING BRUNCH AT HOME 🎄✨ this yummy brunch recipe is so easy, gluten free & a crowd pleaser (truly one of my favourite recipes I’ve made in a long time)
Think crustless quiche-ish with all the coziest warm flavours

Start off caramelizing onions in butter, I like to add a dash of maple syrup to bring out a bit of sweetness

Bake bacon to your desired crispiness & while that cooks get started on chopping your sweet potato’s - it’s a bit tedious, but make them tiny!

When the bacon is done, roast those sweet potato’s on the same pan the bacon was cooked on, this will help it soak up the flavour a bit 😍

Once the sweet potatoes are ready, mix into an oven safe pan with your onion and bacon bits (I love my @ourplace pan for this)

Pour ~10 eggs scrammed on top and put in the oven at 325° for about 25 minutes.

I served mine with a salad which included -
Arugula
Pear
Cranberry goat cheese
Dried cranberries
Olive oil
Salt
