Frittata recipe: Sausage, kale, potato & cheddar frittata: Ingredients: 1. 8 eggs 2. 5 yellow baby potatoes (chopped) 3. 1 shallot (chopped) 4. 1/2 lb mild ground Breakfast sausage 5. 1 cup kale (chopped & stems removed) 6. 1/2 cup shredded cheddar 7. 1 tbsp butter 8. 1/2 cup half & half lb 9. Salt & pepper to taste Instructions: 1. Pre-heat oven to 350 degrees 2. Add butter to an oven safe sauté pan on medium heat 3. When butter is melted, add shallot and potatoes to soften for about 3-5 mins 4. Add ground sausage to pan & brown for about 5 mins, breaking up with a spoon as you cook 5. While sausage cooks, add eggs & half & half to a bowl & whisk until smooth & light yellow color. Add salt & pepper to taste 6. Add egg mixture to pan & sprinkle kale on top, folding it in softly but not scrambling eggs too much 7. Add half of the cheddar on top of pan and fold in, add remaining half to top 8. Once egg mixture is slightly set, place pan in oven uncovered and cook for approx 20 mins until frittata is firm and cheese is browned and bubbly on top 9. Cut in slices, serve immediately and enjoy!
