Masters week cottage cheese dip! Cottage cheese dip: *adapted from New York Times Cooking Ingredients: 2 tbsp olive oil 1 cup chopped yellow onion Salt & pepper to taste 1 pint full date cottage cheese (i like good culture brand) 1/3 cup roughly chopped basil 1/3 cup roughly copped parsley 1/4 cup thinly sliced chives or scallions + more for garnish 2 tablespoons freshly squeezed lemon juice (from one large lemon) Directions: 1. Add olive oil and chopped onion to a pan on medium heat, add salt to taste and stir as onions turn translucent and start to brown (5-7 min) 2. Put cooked onions in a bowl to cool while you prep the rest of the ingredients 3. Chop all veggies and assemble them with crackers and chips on a serving tray 4. Chop all herbs & juice one lemon, set lemon juice aside 5. Add cooled onions, lemon juice, herbs and cottage cheese to a blender or food processor and blend until smooth and light green in color 6.
