SESAME CUCUMBER SALAD 🥒 this one really has a hold on me currently 🤍 I’ve been making it daily and I have no plans to stop. Cucumbers are high in immune-boosting vitamin C and they have a high water content which makes this a refreshing and hydrating side dish this time of year. Plus, it’s just so flavorful. I can’t wait to hear what you all think of this one. INGREDIENTS: 3 Persian cucumbers, thinly sliced (use a mandolin for best results) 1/2 small red onion, thinly sliced (use a mandolin for best results) 3 tablespoons toasted sesame seeds 1 tablespoon good quality olive oil 1/2 teaspoon toasted sesame oil (or more to taste) 1/2 small lime, juiced 1/4 cup fresh cilantro, chopped drizzle of runny tahini drizzle of date syrup salt to taste (start with 1/4 teaspoon) HOW TO: Add all ingredients to a small mixing bowl, toss and taste and adjust flavors as desired. Notes: I personally go heavy handed on the tahini and date syrup. The toasted sesame oil is strong so start with less - you can always add more if you want more sesame flavor. Make sure you buy toasted sesame oil and not regular sesame oil here. It is best if you use cucumbers that are already chilled here so you can serve immediately.
