Summer and ice cream just go together. Kind of like peanut butter and jelly, milk and cookies, or pancakes and maple syrup. But a cold, creamy bowl of ice cream on a hot summer day feels like, well a little slice of heaven. The only problem is that traditional homemade ice cream can sometimes feel like a project. Between the special equipment, long ingredient lists, and waiting for everything to churn, it’s not always something I have the time or the patience for. That’s why I was so intrigued when I started seeing cottage cheese ice cream pop up everywhere. And if I’m being completely honest, I was skeptical.
