I’ve been making this grilled marinated zucchini for our family for years and when I shared that I was making it a couple of weeks ago in stories I couldn’t believe how many people asked for the recipe. Well the truth was, I didn’t have a recipe! I’ve always just added a little of this and a little of that. But, since I can’t share what a little of this and a little of that equates to, I thought it was probably time to come up with an exact recipe that I could easily share with you. So by popular request, here’s my marinated zucchini recipe! It’s a delicious summer side dish that I make about once a week in June, July, and August and serve with grilled chicken, steak, hamburgers, and grilled shrimp. I also like to take the leftover zucchini the next day, dice it up, and add to a salad…oh my gosh, it’s to die for!!!
