Last nights wedding dress was spectacular

It’s grilling season, Here’s an easy, fresh chickpea salad recipe that’s perfect for a side dish.

INGREDIENTS

* 2 cans chickpeas, drained + rinsed
* 1 cucumber, diced
* 1 bell pepper, diced
* 2 cups cherry tomatoes, cut in quarters
* ¼ red onion, finely diced
* 1 cup cubed mozzarella cheese (optional but so good)

DRESSING

* 3 tbsp olive oil
* 1/2 cup red wine vinegar
* 2 garlic cloves, sliced or minded
* Salt + pepper to taste

Instructions

1. Add chickpeas, cucumber, tomatoes, red onion, mozzarella, peppers .
2. Mix together the olive oil, vinegar, salt, and pepper.
3. Pour dressing over salad and toss well.
4. Let it sit for 10–15 minutes so the flavors soak in (or eat immediately).

Easy add-ins depending on your vibe:

* Avocado for creaminess
* Grilled chicken for protein
* Bell peppers or olives for crunch/saltiness
* Quinoa if you want it more filling

It tastes even better after chilling in the fridge for a few hours. 💛
