After a busy day of writing, I couldn’t help but wonder… Why do leftovers sometimes feel more dependable than dinner plans? Sunday’s Mushroom, Spinach & Swiss Quiche, from Magnolia Table, Volume 1, waited patiently in the refrigerator. Buttery crust. Earthy mushrooms softened with onion. Spinach folded into cream and eggs. Nutty Swiss melted into a golden, lightly set center. It was simple at brunch. It was perfect tonight. Maybe it’s the way the flavors settle into each other. Or maybe it’s just the comfort of knowing something good is already made. And just like that… leftovers became the best part of the day.
