this salad tastes like spring in every bite and it’s SO easy to throw together

sweet louisiana strawberries + creamy burrata + arugula + that tangy balsamic + fresh mint … it just works

saving this for spring because it’s light, fresh and looks way fancier than it is 🙌🏼

you need:
• 1 pint strawberries (sliced)
• 3–4 oz arugula
• 8 oz burrata
• 2 tbsp balsamic glaze
• olive oil
• flaky salt + pepper
• 1/4 cup chopped pistachios
• fresh mint or basil
• optional: pickled red onion

how to:
toss strawberries with balsamic + let sit ~5 min
layer arugula, strawberries + burrata
finish with pistachios, herbs, olive oil, salt + pepper
(extra balsamic drizzle because yes 😮‍💨)

high protein cucumber salad I keep seeing everywhere… so I had to try it 🥒✨

and yes… it’s THAT good.

fresh, creamy, garlicky, a little tangy… and somehow so addictive 🤍

ingredients:
• 1 cucumber, thinly sliced
• 1/2 small red onion
• 2 tbsp greek yogurt (or sour cream)
• 1–2 cloves garlic
• juice of 1/3 lemon
• 1 tbsp olive oil
• salt + pepper
• ~150g cooked chicken breast
• fresh dill (optional but everything is better with dill)

mix everything together (or shake it good 😄) and let it sit for a few minutes so all the flavors come together.

👉 you’ll make it again… trust me.

how to make them:
• boil ingredients + eggs for ~30 minutes
• add a splash of vinegar
• let sit (I did ~4 hours — longer = darker color)
• air dry (don’t rinse!)
• rub with a little oil for shine ✨
• optional: gold flakes for extra fancy 😌

the BEST sourdough bagels you’ll ever make 🥯✨
golden outside, soft + chewy inside… just how they should be 👌🏻

ingredients:
• 150g active bubbly starter
• 250g warm filtered water
• 500g bread flour
• 40g sugar
• 12g salt
• 20g honey (for boil)

instructions:
1. mix starter + water until milky
2. add flour + salt + sugar, mix until combined
3. knead 5–6 min (by hand is best 🤍)
4. cover + rest 60 min
5. do a set of stretch & folds
6. let rise overnight (or until doubled – my house is ~70°F) more warmer - they will rise quicker
7. divide dough into 8 equal pieces
8. shape into bagels
9. cover + second rise until puffy (about 1–1.5 hours)
10. boil in honey water (30 sec each side)
11. bake at 425°F for 20–25 min until golden brown

👉 save this for your next sourdough bake.
