10/10 recommend hosting a “Pot Lucky” dinner party with your friends where everyone brings a dish! Since this was a nod to St. Patrick’s day I asked everyone to bring a would bring a dish that either called green ingredients or was said to be a lucky dish! But you can throw a pot luck party anytime and it makes hosting so much easier and more enjoyable.
I planned on making a cucumber mint cocktail, but you know how last minute I am so I whipped up some fresh skinny margaritas with green limes instead!

Pesto Pasta Salad Recipe:
Rotini noodles
Diced cucumbers
Chopped cherry tomatoes
Arugula
Mozzarella cheese pearls
Diced red onion
Small jar of pesto sauce
Greek yogurt
Top with fresh Parmesan cheese

Steps:
Cook your pasta & let cool. Then mix in all of your ingredients. I added two scoops of Greek yogurt to my pesto to make it creamier and then I drizzled a little olive oil on top so the noodles wouldn’t stick together. Be sure to chill in the fridge before serving.
