Okay I just made the most delicious Lemon Blueberry Muffins.. so perfect for summer! 🍋🫐 Recipe: 2 cups flour 1 cup sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 cup butter, melted 2 eggs 1 cup buttermilk 2 tsp vanilla 2 tbsp lemon zest, set aside a small amount for glaze 1 cup blueberries 1 cup powdered sugar 2 tbsp lemon juice Mix together flour, sugar, baking powder, baking soda, salt in a mixing bowl. In a separate bowl, mix together butter, eggs, buttermilk, vanilla and lemon zest. Combine wet and dry ingredients. Fold in blueberries. Pipe into a greased donut pan. Bake on 350* for 12 mins. Let cool 5 mins. For glaze, mix together powdered sugar and lemon juice and a pinch of lemon zest. (Or top with lemon finishing sugar) Drizzle the glaze overtop of the donuts.
