I have made these breakfast burritos four years after my mother-in-law showed us how. Our mornings are so much more smooth when the boys have something quick and hearty to eat. You will need: 2lb sausage browned 2 dozen eggs scrambled 1 package hashbrowns 1 package cheddar cheese 3- 8 ct burrito soft shells Salt + pepper I like to brown the sausage first and then put it in a bowl. Use the same pan to dump in the eggs and scramble them- then in a large bowl mix the scrambled eggs, sausage, hashbrowns, and then scoop a half a cup into each burrito shell and top with cheese wrap up and then wrap in Saran Wrap. When you’re ready to cook, take one breakfast burrito out of the saran wrap and wrap it in a paper towel cook in the microwave for 1.5 minutes. LTKHome LTKfoodie
