First time making custard-based ice cream! I usually make eggless but I'm testing some recipes that came with my new @cuisinart machine and the boys love #butterpecan #icecream so I thought, what the heck, let's do it!

LETMEJUSTTELLYOU this is so freakin' delishus and you may know of my addiction to homemade stracciatella gelato and this seriously competes!

Subbed whole milk and heavy cream with @fairlife high protein #lactosefree milk and lactose free half-and-half.

HOMEMADE LACTOSE-FREE
STRAWBERRY ICE CREAM!

I had about a pint of strawberries, perfect for a small batch of homemade strawberry ice cream!

I make all our homemade ice creams lactose free with @fairlife high protein lactose free milk and lactose free @organicvalley lactose free half and half. NOT sponsored 😆

->Strawberries (pulsed in a food processor)
->Add sugar and lemon juice, chill
->Mix in dairy and lemon zest
->Freeze!

(I keep the machine running while I portion to keep the ice cream from freezing to the bucket.)

Love my @cuisinart machine!

Since I’m Asian, I guess it’s just NOODLE night! 🤣

We love these A-SHA noodles because they’re air-dried (not fried), cook up like fresh noodles, and the ingredients list is 👌🏼👌🏼👌🏼.

I worked on a #lactosefree #stracciatellagelato last year. Had all the right dairy in the beverage drawer so l was forced to make it again!

This is step 1: Make the base.
Sugar
@fairlife whole milk (lactose free AND high protein)
@organicvalley lactose free half-and-half
Warm to dissolve the sugar fully...
Chill overnight...

Next video, we’ll  make the #gelato!

PART 2: The base has chilled overnight, now to make the #gelato!

While the base is freezing, melt the chocolate - I’ve found that the @bakerschocolate 66% Bittersweet has the perfect balance, not too bitter (@guittardchocolate’s 64% is also a fave), and both melt easily. I’ve done the double-boiler method and, honestly, microwaving it is just easier and returns a perfectly fine melt. To each her own.

Once the base is almost done, drizzle in the melted chocolate. This is the hard part - getting that fine drizzle! You don’t want chunks of chocolate - that FINE FLAKE is what makes #stracciatella a stracciatella.

Then, package in serving sizes for this week’s meal prep! 🙌🏼😂

PASTA NIGHT!

A refreshing and easy pasta dish that is in regular rotation in our kitchen is LO SPAGHETTO AL POMODORO! Crushed tomatoes, olive oil, flake salt, hot pasta and some pasta liquid. Give it a good toss and serve with burrata, fresh basil, and another drizzle of olive oil and sprinkle of flake salt. SO.GOOD!

And don’t forget the pasta puzzle for Pasta Night!
