FAVORITE FALL RECIPE- Pumpkin Chocolate Chip Muffins RECIPE- Ingredients: 1 can pumpkin (not pie filling) 1 1/2 cups vegetable oil 4 eggs 3 cups all-purpose flour 2 cups sugar 2 teaspoons baking soda 2 teaspoons baking powder 1 teaspoon salt 1 tablespoon cinnamon 1 cup chocolate chips Cinnamon and sugar to sprinkle on top Directions: With a whisk, mix the first 3 ingredients really well. Next, combine flour, sugar, baking soda, baking powder, salt and cinnamon. Add the combined dry ingredients to the wet ones and stir only until they are combined. Stir in chocolate chips and pour into prepared muffin tins. Sprinkle tops with sugar and cinnamon. Bake at 375° for 12-18 minutes. Let cool 3-5 minutes and remove carefully as some of the chocolate chips may sink to the bottom. Muffin liners are a great idea for this recipe.
