boursin & brown butter mashed potatoes☁️🥔 a little elevated twist on the classic, without being over powering with the rest of the sides. perfect for Thanksgiving + Friendsgiving this year 🦃 Ingredients - * 3 pounds potatoes (russet and gold) * 1-2 rosemary leaves * 2 cubes of chicken bouillon * 1 Boursin cheese * 8 oz salted butter * 1/2 cup half-and-half * chives for topping * salt, to taste 1. Brown butter in pan on medium heat and set aside 2. Peel and chop potatoes, then add to a large pot with chicken bouillon and rosemary leaves. Boil for 20-25 minutes, or until potatoes are fork-tender. 3. Drain potatoes and let steam on same pot to get rid of any excess water discard rosemary leaves, and use a potato ricer or masher to achieve a smooth consistency. 4. Fold in boursin cheese, half-and-half, and butter, mixing until creamy and fully combined. Salt to taste. 5. Pour brown butter and chives over the mashed potatoes. Serve and enjoy!
