I always want to remember them little like this snuggled under the tree in matching holiday jammies… Baxter’s first Christmas where he believes in all of the magic with Santa, looks forward to checking his elf on the shelf’s whereabouts every morning, and the fact that he has a garbage truck and more hot wheels on his list this year… Then there is sweet baby Barron, and it’s his first actual Christmas. He is just happy as can be crawling around and along for the ride.

The holidays are my favorite time of year. There are always tons of parties, and any excuse to get dressed up is always a yes for me. These festive ice cubes are perfect to add to sparkling water or cocktails and if you’re hosting a holiday party this season, these are easy and quick to make and definitely make any beverage more fun

Ingredients -
Frozen cranberries 
Orange slices 
Rosemary sprigs
Ice cube trays (linked)
Pretty glassware (mine are vintage)

Instructions-
1. Slice oranges into small cubed pieces
2. Cut small rosemary sprigs into 1” pieces 
3. Place orange slices, cranberries, and rosemary sprigs into each ice tray.
4. Fill with water and freeze overnight
5. Pop out of silicone into glassware and add sparkling water or your favorite holiday cocktail

DIY paper whites 

What you need-
-A wooden vessel for the paper whites (I linked a few options) 
-a circular trash bag cut out in the shape of the vessel
-A plastic container to protect the vessel
-Dirt
-Pea gravel 
-Styrofoam wrap to keep everything in place 
-Moss
-Paper whites (I used 8) and mine are from Trader Joe’s 

step 1
Cut out a piece of plastic from a trash bag that it slightly larger than your vessel and place inside

Step 2
Put your plastic container with dirt half way full on top of the plastic

Step 3
Wrap the styrofoam around the plastic container to keep it snugly in place

Step 4
Fill the rest of the plastic container with pea gravel

Step 5 
Nestle the paper whites into the pea gravel. If using more mature ones like me make sure the roots go into the dirt and are properly covered. If using bulbs you can just nestle on top and the roots will grow down

Step 6 
Shape moss around the vessel and paper whites into bulbs

Make sure to water every other day

I made my first beef stew this week and it did not disappoint! I love a one pot meal and if you don’t already have an instant pot, I highly suggest getting one because it makes meal prep so easy and dinner is ready in minutes! Mine is currently on a major Black Friday sale for $60 so it’s a good time to get one if you don’t already have one! 

INGREDIENTS
* 		1 ½ pounds stew meat, cut into 1-inch cubes
* 		Kosher salt and freshly ground black pepper, to taste
* 		2 tablespoons unsalted butter
* 		4 cups low sodium beef broth
* 		1 pound baby Dutch yellow potatoes, cut into 1-inch chunks (I used white sweet potato instead) 
* 		4 carrots, cut into slices
* 		4 ribs celery, cut into slices 
* 		3 cloves garlic, minced
* 		2 tablespoons tomato paste
* 		1 tablespoon Worcestershire sauce
* 		1 teaspoon dried thyme
* 		1 teaspoon dried rosemary
* 		¾ teaspoon smoked paprika
* 		2 bay leaves
* 		4 tablespoons all-purpose flour
* 		1 cup frozen petite peas
* 		2 tablespoons chopped fresh parsley leaves

INSTRUCTIONS
* 		Season beef with salt and pepper, to taste.
* 		Set instant pot to high saute setting. Melt butter; add beef and cook until evenly browned, about 2-3 minutes.

* 		Stir in beef broth, scraping any browned bits from the bottom of the Instant Pot.

* 		Stir in potatoes, carrots, celery, garlic, tomato paste, Worcestershire, thyme, rosemary, paprika, and bay leaves until well combined; season with salt and pepper, to taste. Select manual setting; adjust pressure to high, and set time for 30 minutes. When finished cooking, quick-release pressure

* 		In a small bowl whisk together flour and 1/2 cup stew broth.

* 		Select high sauté setting. Bring to a boil; stir in flour mixture and cook, stirring frequently, until slightly thickened, about 3-4 minutes. 

* 		Stir in peas until heated through, about 30 seconds.
* 		Serve immediately and garnish with parsley

I’ve been in a comfort mood the past few days and craved chicken pot pie. I usually buy them but decided to make a healthy-ish version of this classic at home and the results were better than I could have imagined. This portion is for 4 people and Bryce and I ate the entire thing!

Chicken pot pie Ingredients-
* 1 tablespoon extra-virgin olive oil
* 1 cup diced carrots about 3 medium
* ½ cup diced celery about 1 large stalk
* 1 ½ teaspoons garlic powder
* ½ teaspoon kosher salt
* ¼ teaspoon ground black pepper
* ¼ cup all-purpose flour
* 2 cups unsweetened almond milk (I used regular milk)
* 2 cups cooked and shredded boneless, skinless chicken breasts* about 8 ounces or 2 small breasts
* ½ cup frozen peas
* ½ cup frozen pearl onions (I skipped the onions)
* 1 tablespoon chopped fresh thyme

Biscuit ingredients-
* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 1 teaspoon salt
* 1/2 cup unsalted butter, cold and diced
* 3/4 cup buttermilk
* 1 egg, beaten (for egg wash)

Biscuit Instructions- 
1. Mix flour, baking powder and salt. 
2. Add butter and work into mixture
3. Lightly mix in milk, but don’t over mix.

Pot pie Instructions-
1. Sauté the carrots, celery, and spices in olive oil. 
2. Scatter flour over the vegetables, and let cook for a few minutes. Add the milk little by little, stirring to incorporate. Boil the mixture until thickened, then add the chicken, peas, onions, and thyme. Transfer the mixture to a pie dish. 
3. Place the biscuits on top of the dish. Brush them with the egg wash
4. Bake the chicken pot pie at 425 degrees F for 25 minutes, until golden. Let the pot pie sit for a few minutes, then enjoy!

It’s soup season and I was craving a healthy but delicius soup last night and came across this instant pot chicken and veggie soup recipe. Bryce and I couldn’t believe how good it was and the best part is it took 10 minutes to make. I threw all of the ingredients into my instant pot and had soup perfection. I served with a crisp green salad and crusty bread and I will definitely be making it again soon. 

Instant Pot chicken and veggie soup

Ingredients:

1 1/2 tbsp olive or avocado oil
1 medium white or yellow onion, diced
3 celery ribs, diced, about 1 cup
1 tbsp garlic, minced
6 cups chicken stock
1 1/2 lbs chicken breasts or thighs, skinless, boneless, diced into 1-inch pieces
3 large carrots, chopped, about 2 cups
2 tsp salt
1 tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp onion powder
I also added a few chopped baby potatoes 

Instructions:
* Turn your Instant Pot to the sauté setting. When it’s hot, add your oil and then the diced onion, celery, and minced garlic to the Instant Pot. Stir and sauté the onion until translucent, about 2 to 3 minutes. Once done press the cancel button to stop sautéing. 

* Add chicken stock, chicken, carrots, potatoes, salt, pepper, oregano, thyme, and onion powder to Instant Pot.

* Seal the Instant Pot. Set it to Pressure Cook (or Manual, depending on the model Instant Pot you have) on high pressure for 10 minutes. 

* Carefully release the steam once done. Garnish with fresh chopped parsley before serving.
