a childhood favorite recipe of mine but cutting the prep time in half but it still has the same great flavor 🤌🏻 recipe below! Ingredients: 2 lbs ground beef 2 cups long grain white rice 5-6 roma tomatoes, diced 1 bunch of parsley, finely chopped 1/3 cup fresh dill, finely chopped 1 white onion, diced 3 tbsp olive oil salt, to taste fresh cracked pepper, to taste 2 cups water instructions: 1. Preheat the oven to 400 degrees. 2. In a cast-iron skillet over medium-hight heat, brown the ground beef, seaon with salt and pepper, and drain any excess grease. 3. Once the ground beef is finished cooking, add about 2 tbsp olive oil, rice, and diced white onion. Saute for about 2-3 minutes. 4. Add in your diced tomatoes, fresh dill and parsley, stir to combine and taste to season with more salt and pepper to your liking. Note: add more olive oil as you cook if needed. Saute for another 1-2 minutes. 5. Once the flavor is to your liking, turn the heat off and pour in two cups of water. Stir to combine. 6. You can bake this uncovered or covered with foil. I personally like the top to get a little crispy so I bake uncovered. Place the skillet in the oven to bake for 30 minutes. 7. Once cooked and the rice is fluffy, remove from the oven and stir. Top with fresh herbs and serve warm to enjoy!
