Ingredients: 1 Ib boneless and skinless chicken breast cutlets 1 cup flour 2 eggs, beaten 1 cup panko breadcrumbs 1 cup breadcrumbs Salt, to taste Pepper, to taste 1/3 cup olive or avocado oil 1 jar tomato basil pasta sauce sliced mozzarella cheese Fresh basil, for garnish Instructions: 1. ���Preheat the oven to 375 degrees. 2. ���Use a meat mallet to pound the chicken even and thin. 3. ���Season the chicken with salt and pepper. 4. ���Create an assembly line to bread the chicken. Lay out a bowl with beaten egg, a bowl with flour, and a bowl with bread crumbs. 5. ���Dredge the chicken in flour, lightly coating each side. Place the flour coated chicken in the egg wash. Dredge the chicken in the breadcrumb mixture, coating each side. 6. ���Add olive oil to a pan over high heat, and fry on each side for 3-4 minutes or until the internal temperature has reached 165 degrees. 7. Once the chicken is cooked, pour half the jar of pasta sauce over and around the chicken. 8. Top with fresh sliced mozzarella and place in the oven to bake for 15 minutes. Note: towards the end of the baking time (about 2-3 minutes left) I like to broil to get the cheese nice and bubbly. 9. ���Serve warm with fresh basil and enjoy! LTKSeasonal LTKFamily
