it’s monday so of course we’re having a crockpot meal for dinner 🤪 this one is so easy and sooo good! sharing the recipe below 👇🏻 Ingredients: * 1.5 lbs boneless, skinless chicken thighs or breasts (I prefer thighs for this!) * 1/2 cup coconut aminos * 1/4 cup hoisin sauce * 1/3 cup honey * 4 tbsp butter, melted * 4 garlic cloves, minced * Salt, to taste * 4 tsp white pepper (black pepper works too) * 2 tsp arrowroot flour (or cornstarch) * 3 tsp water * Sesame seeds, for garnish * Green onion, sliced, for garnish Instructions: 1. In a large bowl, combine melted butter, coconut aminos, hoisin sauce, honey, minced garlic, and 2 tsp white pepper. Mix well and set aside. 2. Add the chicken thighs to the crockpot. Season with salt and the remaining white pepper, then pour the sauce mixture over the chicken. Flip the chicken to coat it evenly. 3. Cook on HIGH for 4 hours or LOW for 8 hours. 4. In the last 15 minutes of cooking, whisk together the arrowroot flour and water, then stir it into the sauce to thicken. Cover and let cook for the remaining 15 minutes. 5. Once cooked, shred the chicken directly in the crockpot and mix it into the sauce. 6. Serve warm over rice with a veggie of choice (we love roasted broccoli with this!) and garnish with sesame seeds and sliced green onion.
