pretty much a private chef for my toddlers these days 🤪 these are easy to prep ahead of time & something my entire family looooves! recipe below! Make Ahead Baked Meatballs Ingredients: 1 lb ground beef 1 lb Italian sausage 1 tbsp fresh Italian parsley, finely chopped 1 shallot, finely diced 4 garlic cloves, minced 1/4 cup grated Parmesan cheese 2 tbsp breadcrumbs 1/4 cup almond flour 2 eggs Salt & pepper, to taste (2) 24 oz jars of basil marinara sauce Fresh grated parmesan cheese, for garnish Instructions: 1. Make the meatballs: In a large bowl, combine the ground beef, sausage, parsley, shallot, garlic, Parmesan, breadcrumbs, almond flour, eggs, salt, and pepper. Mix until just combined, then roll into golf ball sized balls. Place them in a baking dish, cover until ready to bake and set them aside in the fridge. 2. Once ready to bake, remove the baking dish from the fridge and cover with the two jars of marinara sauce. Season with salt and pepper and toss to combine and coat the meatballs well. 3. Cover the baking dish in foil and preheat the oven to 400 degrees. Once the oven is hot and ready, place the baking dish of meatballs in the oven to bake for 30 minutes. 4. After 30 minutes, remove the baking dish from the oven and remove the foil. Grate fresh parmesan over all the meatballs with an amount to your liking. 5. Place the baking dish back in the oven to bake for 10 minutes. For the last 2 minutes of baking, turn the oven to broil on high. Once cooked and bubbling, remove from the oven. 6. Serve the meatballs warm on their own or over your favorite pasta.
