meal planning made EASY! swipe for 5 meals to make this week where you’ll find crockpot dinners, make ahead recipes, one pot dishes and more 👏🏼 Bbq Ranch Enchiladas Ingredients: 4-5 cups chopped rotisserie chicken, about 1 whole chicken 1/2 cup canned corn, drained and rinsed 15 oz can baked beans, drained 1-2 cups shredded Mexican blend cheese 4 oz can green chiles 1 tbsp bbq seasoning, I like rendezvous seasoning Salt, to taste Pepper, to taste Avocado oil or olive oil 12-14 Flour taco sized tortillas 1/3-1/2 cup Bbq sauce Ranch dressing of choice Fresh cilantro, for garnish Red onion, diced for garnish Instructions: 1. Preheat oven to 350 degrees. 2. In a large bowl, combine chopped chicken, beans, corn, green chiles, 1 cup cheese, 1 tbsp bbq seasoning, salt, and pepper. Toss well to combine. 3. Assemble the enchiladas. Lay a tortilla flat and scoop a large spoonful into the tortilla. Roll up and place the seam side down in a baking dish. Repeat until you run out of filling and tortillas. 4. Spray the tortillas with a little oil then drizzle bbq sauce on top of the tortillas and brush them to coat. Drizzle a little ranch dressing on top then place in the oven to bake for 15 minutes. 5. Remove the baking dish from the oven and top with shredded cheese. Place it back in the oven to bake for another 15 minutes or until the cheese is melted and slightly crispy on the edges. 6. Top with fresh cilantro and diced onion. Serve warm and enjoy! Lazy Skillet Chicken Pot Pie ingredients: 1 pack of Trader Joe’s precooked “Just Chicken”, chopped or 2 cups chopped rotisserie chicken 1 carton of Trader Joe’s Mirepoix chopped vegetable mix 1 russet potato, peeled and diced 1 1/2 tbsp Trader Joe’s Herbs de Provence seasoning 1 can Trader Joe’s organic biscuits 4 garlic cloves, minced 1 cup chicken broth 2.5 cup whole milk 1/4 cup all-purpose flour 2 tbsp butter Salt, to taste Pepper, to taste Instructions: 1. Preheat oven to 350 degrees. 2. In a skillet over medium heat, melt 2 tbsp butter. Add the chopped vegetable mix and season with salt and pepper. Sauté for 2-3 minutes. 3. Add in minced garlic.
