lemon dill nourishing soup Ingredients: * 8 cups chicken bone broth (or regular chicken broth) * 2 cups cooked diced chicken, I used rotisserie * 2 lemons, juiced * 1 sweet onion, diced * 5 garlic cloves, minced * 7 celery stalks, chopped * 5 carrots, peeled and diced * 2 tbsp olive oil * 1 cup basmati rice * Salt, to taste * Pepper, to taste * 1/2 cup fresh dill, finely chopped Instructions: 1. In a large pot over medium heat, drizzle olive oil and add diced onion, and garlic. Season with salt and pepper to taste. Sauté for 3-4 minutes. 2. Add the diced celery and carrot. Season with salt and pepper to taste. 3. Pour in the bone broth and stir to combine. With an immersion blender, blend the soup ingredients until smooth. Pour in 1 cup of uncooked rice and juice of two lemons. Stir and cover to bring to a simmer to cook the rice until tender, about 15 minutes. 4. Once the rice is cooked, uncover and stir in the diced rotisserie chicken. Taste and season more if needed. 5. Garnish with the fresh dill and more lemon juice if desired. Serve warm and enjoy!
