Kid and husband approved 🍣 CARAWAY CODE: MARISSA10 This was the perfect dinner for a busy weeknight. It was ready in 30 minutes which I loved! INGREDIENTS Salmon Marinade 1½ lbs salmon skin removed and cut into 1–1½ inch cubes 2 tbsp coconut aminos 1 tbsp sesame oil 1 tbsp honey 1 clove garlic minced Rice Base 3 cups cooked rice Pinch of salt Toppings (mix it up to you liking) Chopped cucumber Avocado Edamame Spicy Mayo ½ cup mayo (I used @primalkitchenfoods avocado mayo) 1-2 tbsp sriracha 1 tsp lime juice -Preheat oven to 400°F. -In a bowl, toss the cubed salmon with coconut aminos, sesame oil, honey, and garlic. Let it marinade while you prep the rice. -Once you’ve cooked the rice (I used a rice cooker), spread the rice evenly into a 9×13 baking dish. I used my favorite from @caraway_home 🤍 -Add the marinated salmon evenly over the rice. Pour any extra marinade over the top. -Bake uncovered for 18–22 minutes, until the salmon is cooked. -Drizzle with spicy mayo and toppings right before serving.
