Why? Because we wash fruits and veggies before eating them to get harmful bacteria (and pesticide residue) off. And we never question if they’re still good for us after washing, do we? You know what else removes harmful bacteria and maintains the beneficial nutrients? Pasteurizing milk. Anyone telling you it “ruins the milk” and it’s better “in its natural state” has either been manipulated and lied to, or is manipulating and lying to YOU.
