I’ve made this recipe for 3+ years and it’s a winner ever. single. time. 👏🏻

CHICKEN TORTILLA SOUP RECIPE 🍲

Sauté 1/4 diced onion, 1 red bell pepper, & 1 yellow bell pepper in 2 tbsp butter (or olive oil like I used!!) with minced garlic. Add to your slow cooker with 2–4 chicken breasts, 28(ish) oz chicken broth, 10 oz enchilada sauce, & spices (I used chili powder, garlic powder, onion powder, taco seasoning, salt & pepper).

Cook on high 4 hours or low 6–8 hours. About 30 minutes before serving, shred the chicken and stir in 1 can pinto beans (I also used black beans!!), 1 bag frozen corn & 1(ish) cup of heavy cream. (If you want it even thicker you can slowly add 1tbsp of flour to the soup until you get your desired consistency).

Top with sour cream, tortilla strips + cilantro and enjoy!

I also got this one in pink/orange !! They are SO cute and very well made too. (Cup is glass but the lid/straw are plastic)
