Cozy Date Night In 🍝 Easy Spaghetti Carbonara (No Cream!)

Nothing says cozy night at home like a big bowl of creamy spaghetti carbonara ✨ This version is simple, classic, and made without heavy cream — just eggs, Parmesan, crispy bacon, and perfectly cooked spaghetti. It feels fancy but comes together in under 30 minutes 🙌🏼

Here’s the exact recipe I made:

Easy Spaghetti Carbonara (8.5 oz Spaghetti Version)
Serves about 3–4

Ingredients:
• 8.5 oz spaghetti
• 4–5 slices bacon, chopped
• 2 large eggs
• ¾ cup freshly grated Parmesan
• ½ tsp black pepper
• Salt (for pasta water)

Instructions:
1. Bring a large pot of well-salted water to a boil. Cook spaghetti until al dente. Reserve about ¾ cup pasta water before draining.
2. While pasta cooks, cook bacon in a large skillet until crisp. Turn off heat but leave bacon and drippings in the pan.
3. In a bowl, whisk together eggs, Parmesan, and black pepper.
4. Add hot drained pasta to the skillet with bacon (off heat). Toss. Slowly pour in the egg mixture while tossing quickly so it becomes creamy and glossy (not scrambled).
5. Add a splash of reserved pasta water at a time until the sauce is silky and coats the pasta.
6. Serve immediately with extra Parmesan and black pepper on top.
