Summer Salad 🍓🥭🥬 INGREDIENTS: 3-4 cups kale diced (I like more kale!) 1/2 cup red onion chopped 1 cucumber chopped 1 cup chopped strawberry 1 cup chopped mango 1 cup feta cheese 2 TB olive oil or enough to cover kale 1/2 cup chopped walnuts or nut of choice 1 avocado chopped (optional) Salt & pepper Optional: 2 oz Halloumi cheese diced and pan seared with drizzled honey (trust me…so good and adds more protein!) DIRECTIONS: 1. Chop kale and mix with olive oil until well saturated 2. Mix in the above ingredients 3. Top with walnuts, avocado, and halloumi pan seared cheese 4. Enjoy!
