Easy weeknight pumpkin muffins!

1 box spiced cake mix
1 can pumpkin puree
2 eggs
Powdered sugar (optional)

Mix all the ingredients together. Spoon the mixture into a pre-greased cakelet pan. Each one should be about halfway full.
Bake in the oven at 350 degrees for 25-30 minutes. Let cool.
Sprinkle powdered sugar over top. Serve immediately.

Add this recipe to your fall entertaining arsenal this year. I imagine you can make this several times during the season if you have friends or family over or just because!

We are a non-alcoholic home so when I spot a delicious mocktail, I have to share!
This one is for coffee lovers who need a little kick to stay up late for those holiday parties. Cold, foamy and almost like dessert, this beautiful drink has 2 shots of espresso that tastes like heaven!

Shakerato Holiday Mocktail

I suggest using espresso ( you all know my @jura_coffee_us did the job!) but a strong cup of hot coffee will do too if you don’t want the caffeine kick. Make sure it’s hot!

2 oz espresso
2 tablespoons of sweetened condensed milk
1 teaspoon of vanilla coffee syrup
1 dash vanilla extract
1 cup of ice

Shake everything together in a cocktail shaker for 30 seconds!! Shake it like crazy so you get that pretty foam ✨

Top with whipped cream, cinnamon or nutmeg!

Makes 2 mocktails.
