The best egg bite recipe! I finally found an egg bite recipe that I love!!! It’s light, it’s fluffy, it’s delicious!! And it’s quick & easy! **RECIPE** 1 chicken sausage (I use Italian style). Dice it up small. I put it in a pan to crisp it up. This is optional as the sausage I buy is already cooked. 6 eggs 2 larger scoops cottage cheese (about 3/4 cup) Handful mozzarella cheese (about 1/2 cup) Salt & pepper -blend until smooth Pour into a silicone muffin pan The silicone muffin pan IS KEY!!! If you use a regular muffin pan you will hate your life trying to get them out. Bake 350 for 16-18 minutes. I baked for 18 minutes for a golden brown top. Serve with any extras you like- hot sauce, sliced avocado I store mine in a container in the fridge. They stay for several days. Enjoy!! 😋
