Super easy weeknight dinner! 🍽️ Ingredients: 1 (12- to 18-ounce) package shelf-stable potato gnocchi 1 large head broccoli (~1 pound), florets cut into 1½- to 2-inch pieces, stems thinly sliced ¼ cup extra-virgin olive oil 1 head roasted garlic 6 garlic cloves, finely grated ½ teaspoon salt, or to taste ½ teaspoon crushed red pepper flakes, or to taste ½ teaspoon black pepper, or to taste 1 pound hot or sweet Italian sausage, casings removed (see note) ¼ cup grated Parmesan, plus more for serving ¾ teaspoon mixed mixed Italian herbs, or to taste 1½ tablespoons lemon juice, plus more to taste Steps: Heat the oven to 425℉/218℃. Lightly grease a sheet pan or line it with parchment paper. Toss the gnocchi, broccoli, olive oil and garlic together in a large bowl until well coated, then season with salt, black pepper, and crushed red pepper and toss again. Spread into an even layer on the prepared sheet pan. Pinch off pieces of the sausage that are roughly the size of the gnocchi and scatter them over top of the gnocchi layer. Roast until the sausage and broccoli are golden and crisp (~20-25 mins). Add the roasted garlic, douse with lemon juice, and sprinkle in the Parmesan and herbs. Stir until the cheese has melted.
