Here’s to baking all season long, this is one of my favorite apple pies, it tastes so dreamy and it’s completely gluten and refined sugar free!🤍 plus I’m overjoyed to be cooking in my cozy pjs from Piyama and getting the chance to cook with my new Caraway cook set!💌 🤍crust: 3 cups almond flour 1 cup tapioca flour 2tbs coconut sugar 1/2 tsp pink salt 12 tbs plant based or grass fed butter 1 egg 🤍filling: 2 pounds of apples of choice 2tbs tapioca flour 2/3 c coconut sugar 2tsp apple pie spice or pumpkin spice 1tbs vanilla 2tbs lemon juice 2tbs butter Combine the almond flour, tapioca flour, coconut sugar, salt and butter in a food processor and blend until combined! In a small bowl, whisk the egg and then add to the dry ingredients and mix again until dough comes together! Divide dough into two rounds and place in the fridge for an hour! Roll out one round of dough in between two sheets of parchment and lay into a dish! Place the sliced apples in a large bowl and add the tapioca flour, coconut sugar, spice, vanilla extract, and lemon juice! Toss to combine, until all the apple slices are evenly coated! Place apple mix in the pan over the dough and put slices of butter over the top! Roll out the rest of the dough and cut into half inch strips and lay them across the top!🤍 Place pie in the oven and bake at 425 for 20 minutes and then 350 for 40 min until golden brown!
