Creamy Chicken Pesto Pasta Bake (One-Dish Dinner or Meal Prep Win!)

Ingredients (6 servings – US Measurements):
• 10.5 oz uncooked pasta (about 2.5 cups dry)
• 1.6 lbs chicken breast (about 2 large breasts, diced)
• 2 ½ cups low-fat Greek yogurt
• ½ cup green pesto
• 4 cups cherry tomatoes, halved
• 4 cups shredded spinach or arugula
• Salt & pepper to taste

Instructions:
Preheat oven to 360°F (180°C).
Mix all the ingredients in one baking dish
Cover with foil and bake for 50 minutes.
Let it rest for 5–10 minutes before serving. Enjoy creamy pesto goodness in every bite!
