We’re celebrating a birthday over here and it’s our family tradition to make these delicious and decadent Chocolate Chip Cookie Bars instead of the traditional cake or cupcakes.

Here’s the back story: my husband insisted that we have a cookie cake for our oldest’s first birthday years ago… after I’d baked a TON of cupcakes already.
