Love an easy one pan dinner 🥘
• 1lb of ground meat (chicken, turkey, or beef)
•cook then add taco seasoning.
• Then mix in 14oz can of drained/rinsed pinto beans, 14oz diced fire roasted tomatoes, hatch green chilis (small can), & 1 cup of frozen roasted corn.
•Top with 6 chopped up corn tortillas (I stuck some within, but primarily left them on the top to crisp)
•Then top with cheese and put in oven on 350 for like
5-10min
•Then broil for just a few minutes to brown the cheese.
•Serve and top with sour cream/Greek yogurt, avocado, Matt added hot sauce, etc
