Gluten free Mac & Cheese recipe plus links! RECIPE -8 oz Banza Pasta (I used the elbows for this) -3/4 cup Cottage Cheese -1 cup Milk (I actually used almond milk!!) -2 tbsp Butter -1 cup shredded cheddar cheese (use sharp or mild) -1 cup Goat cheese crumbles -another 1/2 cup of shredded cheddar cheese set to the side to top before baking -1 tsp garlic powder -1 tsp paprika -1 tsp Himalayan pink salt -1/2 tsp crushed black pepper -4-6 pieces of cooked bacon chopped -optional: gfree breadcrumbs- I used a paleo kind on our family one -optional: top with crushed red pepper -Preheat to 375°F -grease a casserole dish and/or muffin liners (I use avocado oil) -Boil & cook Banza pasta, drain and rinse- set aside -In a saucepan whisk together Cottage Cheese, Butter, and Milk over low heat. Add a 1/2 of the shredded cheddar cheese and 1/2 of the goat cheese, stir allowing to melt together. -Add the rest of the cheese, stir in seasonings, then stir pasta in, and then add the bacon *You can serve straight from the Pan -if baking, pour Mac&cheese into greased casserole dish and/or muffin tins -Sprinkle with 1/2 cup of shredded cheese *optional to add breadcrumbs -Bake for 15-20 minutes Hope you love it as much as we do!
