Steak with Charred Scallions and Chili Crisp recipe below 🥩👇

Ingredients:
Filet mignon
Salt and pepper
Avocado oil
1 bunch green onions
Tamari
Toasted sesame oil
Chili crisp
Flakey salt
Crushed peanuts
Cilantro

How to make:
Remove the steaks from the fridge and let come to room temperature for 30 minutes, and preheat the oven to 400F.

Pat the steaks very dry and season generously with salt and pepper on both sides.

Heat @madein carbon steel pan over medium heat until very hot but not smoking. Add avocado oil to the pan. Increase heat to medium-high and sear the steaks on both sides until a golden-brown crust forms, 2 minutes per side. Transfer the steaks to the oven and cook until desired doneness, about 5 to 8 minutes depending on how you prefer your steak. I did about 6 minutes for medium/medium-rare on the larger filet. Remove from the oven and transfer to a cutting board to let rest for 5 minutes.

Cut your green onions into 1-inch chunks. Add to the same skillet over medium heat and saute until they begin to soften and get a little bit of a blister on the edges, 4 minutes. Set aside.

Slice the steak into thin pieces and lay on a plate. Drizzle with just 1 tbsp tamari and 1 tsp toasted sesame oil. Add chili crisp, to taste. Sprinkle with flakey salt and top with crushed peanuts and cilantro.

I served mine with a sesame-ginger salad, and some steamed rice! Enjoy!

That weird in-between season where you crave something warm and cozy but still fresh and light? This Pan-Roasted Chicken with Cherry Tomatoes, Feta, and Herbs is exactly that. 🍅✨

I love serving it over buttery orzo, and let me tell you—this is a family favorite in my house. Save this one for your next easy, flavor-packed dinner! 💥

Recipe below ⬇️

Ingredients:
4 chicken breasts

2 tsp kosher salt

¼ cup cassava flour (or sub regular all-purpose flour)

2 tbsp extra virgin olive oil

3 cloves garlic, minced

1 pint cherry tomatoes

1/4 cup dry white wine

½ cup chicken broth

2 tbsp freshly squeezed lemon juice (or juice of 1 lemon)

2 oz feta cheese (about ½ block, omit for Whole30/Paleo/dairy-free)

½ cup fresh dill fronds

Instructions:
1️⃣ **Preheat the oven** to 375°F.

2️⃣ Place the chicken on a cutting board, cover with plastic wrap or parchment, and pound to an even **½-inch thickness**. Season both sides with salt and pepper.

3️⃣ In a shallow bowl, dredge the chicken in cassava flour, shaking off excess.

4️⃣ Heat olive oil in a large **oven-safe skillet** over medium-high heat. Sear the chicken until golden brown, about **3 minutes per side**. Transfer to a plate.

5️⃣ Reduce heat to medium-low, add garlic and cherry tomatoes, and sauté until tomatoes blister, about **2 minutes**.

6️⃣ Pour in broth the wine and let reduce by half. Then add the broth + lemon juice, scraping up browned bits. Nestle the chicken back into the skillet.

7️⃣ Crumble feta over the top and transfer the skillet to the oven. Bake **uncovered for 10 minutes**, until the chicken is cooked through and the sauce is bubbling.

8️⃣ Let cool for 5 minutes, then finish with fresh dill. Serve and enjoy!

Chocolate Caramel Nougat Thumbprint Cookies

Makes: 12 cookies
Total Time: 30 minutes

1 ½ cups almond flour
¼ tsp baking powder
¼ tsp kosher salt
¼ cup maple syrup
2 tbsp coconut oil, melted and cooled
1 tsp vanilla extract
6 @unreal.snacks Dark Chocolate Caramel Peanut Nougat Bars
Flakey salt

Preheat oven to 350°F. Line a baking sheet with parchment paper.

In a large bowl, whisk almond flour, baking powder, and salt until clump-free.

Add maple syrup, melted coconut oil, and vanilla. Mix until dough forms, then knead into a smooth ball.

Scoop dough into 1-inch balls, place on the baking sheet, and press a well into each using your thumb or a spoon.

Halve the chocolate bars and press a piece into each cookie well.

Bake for 12 minutes or until edges are golden. Sprinkle with flaky salt.

Cool for 2 minutes on the sheet, then transfer to a wire rack. Enjoy warm!

Sausage Rolls with Hot Honey and Thyme
Makes 36 rolls, Total Cook Time: 45 Minutes

1 lb (16 oz) breakfast pork and sage sausage
½ cup freshly grated sharp cheddar cheese 
1/2 cup panko breadcrumbs
2 eggs
2 tbsp Dijon mustard
1 tbsp fresh thyme leaves
1 17.3 oz (2 pack box) puff pastry
2 tbsp. everything but the bagel seasoning
Nature Nate’s Hot honey, for drizzling

Preheat your oven to 400°F and line a baking sheet with parchment paper.

In a mixing bowl, combine the sausage, grated cheddar cheese, breadcrumbs, 1 egg, and fresh thyme. Mix until evenly combined.

In a separate small bowl, whisk together the remaining egg and 1 tbsp of water until well combined. Set aside. 

Unroll the puff pastry on a floured surface. Roll out slightly to create a large rectangle and cut the pastry in half to two long strips. Repeat with the second puff pastry dough, so that there are 4, long strips. 

Divide the sausage mixture into fourths, shaping each half into a long log. Place each log in the center, lengthwise along the pastry strips, press and push so that it creates a long, thin line of sausage down the center of each puff pastry strip.

Brush one side of the puff pastry with Dijon mustard, then brush the other side with the egg wash. Roll the pastry around the sausage, letting the egg wash act as a seal. Flip it over so that the seam is on the bottom. Using a paring knife, score small slits into the top of the sausage logs, then cut them into 1 ½-inch rolls. 

Place each roll seam-side down on the baking sheet, brush with the remaining egg wash, and sprinkle with everything but the bagel seasoning. Transfer to the oven and bake for 18 to 20 mins, or until the pastry is puffed and golden brown and the sausage is cooked through.

To serve, let the sausage rolls cool slightly before transferring to a platter. Drizzle each sausage roll with hot honey, sprinkle with extra thyme, and serve warm.
