BOUGIE BURGER NIGHT 🍾 These smashburgers with “special truffle sauce” are going to change your burger game 🍔✨ If you’re looking to make a switch to clean cookware that’s free from harmful chemicals, the @madein’s Carbon Steel collection is outstanding. Smashburgers with Special Truffle Sauce

Special Truffle Sauce:
½ cup mayo
¼ cup finely chopped cornichons
1 tablespoon dijon
1 tablespoon freshly squeezed lemon juice
1 tablespoon black truffle oil
Salt & pepper

Burgers:
2 pounds ground beef
Salt & pepper
6 brioche buns
12 slices gruyere

Serving:
Baby arugula
Caramelized onions
Cornichons

1️⃣ In a small bowl, combine the mayo, chopped cornichons, Dijon, lemon juice, and truffle oil. Season with salt & pepper to taste. Stir well, then cover and refrigerate until ready to use. This keeps well for 5 days.
2️⃣ Thinly slice 2 large yellow onions. In a large skillet over medium heat, warm 1–2 tablespoons of oil. Add onions and a pinch of salt. Cook, stirring often, until deeply golden and caramelized, about 30–40 minutes. Set aside.
3️⃣ Divide the ground beef into 12 equal portions (about 2.5 to 3 ounces each) and roll into loose balls. Heat a large cast iron skillet or griddle over medium-high heat until very hot. Working in batches, place 2–3 beef balls in the skillet. Immediately smash each with a heavy spatula or burger press until very thin. Season with salt & pepper.
4️⃣ Cook for about 2–3 minutes, or until the edges are crispy and browned. Flip, top with a slice of cheese, and cook for 1–2 more minutes, or until the cheese is melted and the patties are cooked through. Transfer to a plate and repeat with remaining patties.
5️⃣ Lightly butter the brioche buns and toast cut-side down in the skillet until golden brown.
6️⃣Assemble and enjoy!

Steak with Charred Scallions and Chili Crisp recipe below 🥩👇

Ingredients:
Filet mignon
Salt and pepper
Avocado oil
1 bunch green onions
Tamari
Toasted sesame oil
Chili crisp
Flakey salt
Crushed peanuts
Cilantro

How to make:
Remove the steaks from the fridge and let come to room temperature for 30 minutes, and preheat the oven to 400F.

Pat the steaks very dry and season generously with salt and pepper on both sides.

Heat @madein carbon steel pan over medium heat until very hot but not smoking. Add avocado oil to the pan. Increase heat to medium-high and sear the steaks on both sides until a golden-brown crust forms, 2 minutes per side. Transfer the steaks to the oven and cook until desired doneness, about 5 to 8 minutes depending on how you prefer your steak. I did about 6 minutes for medium/medium-rare on the larger filet. Remove from the oven and transfer to a cutting board to let rest for 5 minutes.

Cut your green onions into 1-inch chunks. Add to the same skillet over medium heat and saute until they begin to soften and get a little bit of a blister on the edges, 4 minutes. Set aside.

Slice the steak into thin pieces and lay on a plate. Drizzle with just 1 tbsp tamari and 1 tsp toasted sesame oil. Add chili crisp, to taste. Sprinkle with flakey salt and top with crushed peanuts and cilantro.

I served mine with a sesame-ginger salad, and some steamed rice! Enjoy!
