The Defined Dish Soup Week is here! First up, a family favorite - Pesto Parm Meatball & Pastina Soup! 🍲 Comforting, cozy, and absolutely delicious — this one’s on repeat in my house!

Tender little meatballs simmer in a cozy basil pesto–infused broth with the tiniest pasta (I used acini di pepe, but stellini or ditalini work too). There’s just something so lovable about those tiny pasta shapes in soup ✨

I stirred in my homemade Lemon-Basil Pesto (always keep some in the freezer 👌🏼), but if you’re grabbing store-bought, go with a fresh one from the fridge section — skip the pantry jars, trust me. 😉

BOUGIE BURGER NIGHT 🍾 These smashburgers with “special truffle sauce” are going to change your burger game 🍔✨ If you’re looking to make a switch to clean cookware that’s free from harmful chemicals, the @madein’s Carbon Steel collection is outstanding. This griddle is pre-seasoned + naturally non-stick, ready to start using right out of the box! Versatile enough to use outdoors on a grill or indoors on any cooktop this smashburger season!

Smashburgers with Special Truffle Sauce

Special Truffle Sauce:
½ cup mayo
¼ cup finely chopped cornichons
1 tablespoon dijon
1 tablespoon freshly squeezed lemon juice
1 tablespoon black truffle oil
Salt & pepper

Burgers:
2 pounds ground beef
Salt & pepper
6 brioche buns
12 slices gruyere

Serving:
Baby arugula
Caramelized onions
Cornichons

1️⃣ In a small bowl, combine the mayo, chopped cornichons, Dijon, lemon juice, and truffle oil. Season with salt & pepper to taste. Stir well, then cover and refrigerate until ready to use. This keeps well for 5 days.
2️⃣ Thinly slice 2 large yellow onions. In a large skillet over medium heat, warm 1–2 tablespoons of oil. Add onions and a pinch of salt. Cook, stirring often, until deeply golden and caramelized, about 30–40 minutes. Set aside.
3️⃣ Divide the ground beef into 12 equal portions (about 2.5 to 3 ounces each) and roll into loose balls. Heat a large cast iron skillet or griddle over medium-high heat until very hot. Working in batches, place 2–3 beef balls in the skillet. Immediately smash each with a heavy spatula or burger press until very thin. Season with salt & pepper.
4️⃣ Cook for about 2–3 minutes, or until the edges are crispy and browned. Flip, top with a slice of cheese, and cook for 1–2 more minutes, or until the cheese is melted and the patties are cooked through. Transfer to a plate and repeat with remaining patties.
5️⃣ Lightly butter the brioche buns and toast cut-side down in the skillet until golden brown.
6️⃣Assemble and enjoy!
