Mushrooms are such an underrated powerhouse: • rich in antioxidants that help fight inflammation • support immune health (I think we all need this right now😂) • great source of B vitamins for energy • naturally low-calorie but super filling I love using a mix of portobello, baby bella, oyster & shiitake — the more mushrooms, the thicker and creamier the soup. If you don’t want it as thick just use less mushrooms! Ingredients • 2 tablespoons butter • 2 tablespoons olive oil • 2 onions, chopped • 2–3 cloves garlic, minced • Salt and pepper, to taste • 24–32 ounces mushrooms (a mix of portobello, baby bella, oyster, and shiitake works best — the more mushrooms you use, the thicker the soup) • 4 cups beef or vegetable broth • 3 tablespoons sherry or sherry vinegar Instructions 1. In a large pot or Dutch oven, heat the butter and olive oil over medium heat. 2. Add the chopped onions and minced garlic. Cook, stirring occasionally, until the onions are soft and translucent, about 5–7 minutes. 3. Add the mushrooms along with salt and pepper to taste. Cook until the mushrooms release their moisture and soften, about 8–10 minutes. 4. Pour in the broth and add the sherry (or sherry vinegar). Stir to combine. 5. Bring the soup to a gentle simmer and cook for another 10 minutes to let the flavors meld. 6. Using an immersion blender, blend the soup directly in the pot until completely smooth and creamy. • Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return it to the pot. 7. Taste and adjust seasoning as needed. Serve warm. Notes • This soup is naturally rich and creamy without any cream. • For extra depth, you can let the mushrooms brown slightly before adding the broth. • Delicious on its own or topped with fresh herbs, croutons, or a drizzle of olive oil.
