This is my favorite inclusion loaf, and the leftover guava paste from it became something I cannot wait to show you. So this is where the story starts.

If you can make a traditional loaf you can make this. The guava and cheese fold in during your last two stretch and folds, and the overnight cold proof is where the magic happens.

🧾 WHAT YOU NEED
─────────────────────

🫙 A clean glass jar (wide mouth mason jar works perfectly)
⚖️ A kitchen scale (weight is everything — do not eyeball)
🥄 A long spoon or spatula for stirring
🧻 A rubber band or piece of tape (to mark the rise)
🪡 A loose lid, cheesecloth, or coffee filter to cover

🍞 WHAT YOU'LL USE
─────────────────────

▸ All-purpose flour OR bread flour (high protein content; unbleached)
▸ Room temperature filtered or non-chlorinated water
→ Tap water can work but let it sit out for 30 min first so the chlorine dissipates

📋 HOW TO ACTIVATE
─────────────────────

Step 1 — STIR

Step 2 — FEED
Add equal parts starter, flour, and water by weight.
Example: 50g starter + 50g flour + 50g water
Stir until fully combined — no dry flour left.

Step 3 — MARK
Put a rubber band or piece of tape at the current level of your starter so you can track the rise.

Step 4 — COVER
Cover loosely — she needs to breathe. A coffee filter, cheesecloth, or a lid rested on top (not sealed) works perfectly.

Step 5 — WARMTH
Here's my hack: my house temperature is unstable so Do-Kischa lives in the oven with just the light on. No heat — just the light. It keeps her between 75–80°F which is exactly what she needs. She doubles in about 3-4 hours doing this every time.

Step 6 — WATCH FOR THE SIGNS
She's ready when:
✔ She has doubled in size
✔ Bubbles on the surface AND down the sides of the jar
✔ The top is slightly domed, peak activity
✔ She smells tangy and yeasty (not like nail polish, means she's hungry)

Step 7 — THE FLOAT TEST
Drop a small spoonful into a glass of water.
Floats - Good
Sinks - more time or another feeding

Traditional Sourdough Loaf 🍞✨
110g starter • 350g water • 500g flour • 12g salt
Rest 1hr → stretch & fold every 30min for 2.5hrs → bulk ferment until grown & bubbly → shape → banneton → fridge overnight → score → bake 450°
25min lid on, 20min lid off
💾 Save this so it's ready when your starter is!
