Such an easy recipe that packs such a punch! Slice your eggplant and zucchini thick-ish. Drizzle with some olive oil and S&P. Grill until tender—but not mushy! While they’re cooking, using a pestle and mortar, make a garlic paste with salt and olive oil, then add in some fresh parsley at the end. When the veggies are done and piping hot, brush on your garlic oil and ta-da! Let me know if you try this recipe!
