Pumpkin collagen marshmallows

Pumpkin Marshmallows
1/4 cup grass fed beef gelatin
1 cup allulose syrup
1 cup water total (divided: part for blooming gelatin, part for syrup)
1/3 cup pumpkin
1/2 teaspoon cinnamon
1/2 teaspoon mineral sea salt

Instructions
1. Bloom the gelatin:
• Add gelatin to a mixing bowl with 1/2 cup water.
• Mix lightly and let it bloom for a few minutes.
2. Cook the syrup:
• In a saucepan, add 1 cup allulose, ½ cup water, cinnamon, pumpkin , and salt
• Stir occasionally for a few minutes until the mixture is bubbling and golden.
3. Combine:
• Carefully pour the hot syrup mixture into the bowl with bloomed gelatin.
• Using a stand or hand mixer, whip for 10 minutes or until it becomes light, fluffy, and marshmallow-like.
4. Set:
• Pour mixture into a parchment lined container and refrigerate until firm.
• Slice into cubes
