I just found my new favorite salad for the summer!

This shrimp & corn salad is packed with fresh veggies, herbs, and a tangy vinaigrette—perfect for anyone watching their weight but still craving something delicious. Low in calories, high in flavor, and super easy to prep in under 20 minutes!

✨ Recipe Ingredients (serves 4):
– 4 ears fresh corn (about 4 cups)
– 1 heaping cup halved grape tomatoes
– 1 cup diced English cucumber
– 1/3 cup diced red onion
– 2/3 cup crumbled feta cheese
– 3 Tbsp chopped fresh parsley

Marry Me Chicken Pasta… featuring the real star: Sfoglini 🍝
After a long day of mom life and real life, there’s nothing like stepping into the kitchen with ingredients that do the work with you. I made this spring-inspired pasta recipe using @SfogliniPasta—crafted with organic, non-GMO grains and made right here in the U.S. using traditional Italian techniques.

Sfoglini pasta is slow-dried and bronze-cut for that rough texture that holds onto sauce perfectly. It’s the kind of high-quality pasta that instantly upgrades any recipe—and yes, it had him asking for seconds.

Here’s how I made my Marry Me Chicken Pasta:
– 1½ lbs chicken thighs
– Seasoned with: paprika, garlic salt, onion powder, garlic powder, Cajun seasoning, and black pepper
– Coated in flour seasoned the same way, then fried until golden

For the sauce:
– Heavy whipping cream
– Freshly grated parmesan + Italian blend cheese
– Roasted tomato sauce
– Fresh rosemary + thyme
– Garlic powder, onion powder, Italian seasoning
Let it simmer, then toss in your cooked Sfoglini pasta (boiled in salted water with a dash of oil) and you’ve got a cozy, creamy, flavor-packed dinner.
