BIKINI FRIENDLY MAC AND CHEESE makes two generous servings each containing 21 grams protein, 170 calories one bag frozen cauliflower florets (10-12 ounces) one cup 2% cottage cheese (my favorite is good culture, but can’t always find it) quarter cup shredded sharp cheddar (I used reduced fat) salt, pepper and optional turmeric Preheat over to 350. Cook cauliflower to desired tenderness, drain, and cut florets into smaller bite size pieces. Blend cottage cheese with seasonings and combine with cauliflower, then transfer to small baking dish and top with shredded cheddar.
